Spicy Chicken With Couscous

 Ingredients

 - 2 chicken breasts, cut into bite-sized pieces

 - 1 onion, diced - 2 garlic cloves, minced

 - 1-2 tsp red pepper flakes

 - 1 cup couscous

 - Salt and pepper, to taste

 - 1 tsp paprika

 - 1 tbsp olive oil

 - Handful of cilantro, chopped (for garnish) 

 

Method 

1. Prep chicken: Cut two chicken breasts into small bite-sized pieces and season generously with salt, pepper, and paprika.

2. Cook chicken: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 8-10 minutes.

3. Add veggies and seasonings: Add diced onion, minced garlic, and 1-2 teaspoons of red pepper flakes to the skillet. Stir until onions become translucent, about 3-4 minutes.

4. Cook couscous: While the chicken and veggies are cooking, cook 1 cup of couscous according to package instructions.

5. Combine Couscous and Chicken: Once the couscous is cooked, fluff it with a fork and add it to the skillet with the chicken and veggies. Stir well.

6. Serve: Garnish with a handful of chopped cilantro and serve hot.
